Starting 2011 off with Super Yummy KALE!

How can you get more Kale into your diet in 2011?  I will help you address this with a weekly kale recipe this year.  I have no idea how I'm going to find 52 kale recipes that are tasty and low fat but that is my BIG goal for this blog in 2011.

We all need to eat more Kale!  Kale is a superfood.  It has the highest number of nutrients per calorie.  It is high in phytochemicals, Vitamin K, Vitamin A, Vitamin C, Manganese and Calcium.  It helps to prevent several different cancers. I'm so guilty of sticking kale in our morning smoothies so I don't have to figure out what to do with it later on. LOL! I love the idea of a new kale recipe each week!

My current favorite is the Gravy Bowl from Appetite for Reduction. She definitely has lower-fat recipes in this book, and (thanks you you!) I've gotten in the habit of sauteeing in water rather than oil, which is often most or all of the oil she does call for in a recipe. The Vegan Bowl (also kale) is on my list to try this week. :)

I love the bowls in Appetite for Reduction. I also have the kale on my list for this week. I bought the capers the other day to make the dressing.

I love that Isa lowered the fat in this book and it looks like she is taking a healthier approach to eating in general because I notice she has lost a good amount of weight :)

I chuck it into smoothies too. After the holiday excesses I need as much goodness in them as possible.

I can never get it in Publix though (Unless I am particularlty dense and they call it something else), have to make a trip to Whole Foods instead.

Looking forward to some simple man type recipes!

Mike, have you tried any of the recipes from The Engine 2 Diet by Rip Esselstyn? He was an Ironman Triathlete and a Firefighter...and he convinced the firefighters he worked with to go Vegan using his recipes! I will try to do some Engine 2 recipes for you in February. Look forward to some Vegan Soul Kitchen recipes starting this weekend :)
