NEW! Gluten Free Vegan Meal Plan with recipes!

I'm getting a lot of requests from people to see my weekly meal plan.  Though it is a bit time consuming to put it together online, I will try to post at least every other week.  I can't promise every week right now because I know I won't deliver :)

I am providing links to the recipes on other websites so you can take my meal plan and make a shopping list from it. 

Breakfasts
Cooked Rolled GF Oats with Berries, Bananas, Walnuts and Cinnamon (4 days)
Gluten Free Pumpkin Pancakes with Pecans and Agave Maple Syrup (Sunday Only)
Kale Spinach Pear Smoothies (2 days)


Lunches
Quinoa Mango Black Bean Salad
Cabbage Salad
Baked Sweet Potato Salad
(The three of these will make enough for leftovers for Mon-Fri Lunches)

Earthbound Farms Salad Kits (I bought two with $1 off coupons)
Baby Arugula (to be used with Tratteria Pasta and leftovers to be eaten as salad)

Dinners
Califlower Mashed Potatoes and Chickpea Picatta
Trattoria Pasta
Broccoli Curry Udon
Tamarind BBQ Tempeh and Sweet Potatoes
Black Beans and Quinoa with Chipotle Raspberry Sauce


Snacks
Veggies and Low Fat No Oil Hummus
Apple/Carrot Juice
Beet/Celery Juice


Desserts (Experimenting with Agar Flakes!)
Vegan Latchkey Lime Pie

Thank you, thank you! I've been following a lowfat plant based diet and was recently diagnosed with an autoimmune disease so I've been thinking of cutting out gluten but I was overwhelmed with the thought of what in the world I would eat. You have solved the problem!
