The Fall Garden is underway

Okay, I can take no credit for this garden! It is completely my husband's and oldest daughter's work. For the past month they have been busy digging up dirt in the side yard to make way for rows of Eggplant, Corn, Squash, Lettuce, Cabbage and Spinach. Some of the Eggplant planted earlier this summer has already been harvested. I am looking at my favorite blog, Fat Free Vegan, for recipe ideas for tonight's dinner!

I think the Roasted Ratatouille looks good. I'll post photos if I get around to it tonight.

We have a Garden

When my oldest daughter was a baby we had our first small garden of cherry tomatoes, cucumbers, radishes, and okra. My husband grew up in India where his family had a large garden and was surprised at how much the soil in Florida is lacking in nutrients. According to him, in his small town in India, you could "put any seed in the ground and it would grow without manure or fertilizer".

We took a 3 year hiatus from gardening and just started back up again this year, mostly out of necessity. With rising food prices and a cut in my husband's salary, we decided it was time to get the garden started again. Now that we are in a different home with a larger backyard, we could potentially have a large enough garden that could supply us with more than 50% of our fruits and veggies!

Already we are harvesting romaine lettuce, spinach, tomatoes, banana peppers, cherry tomatoes, okra, and pretty soon- watermelon!

What this blog is about

As a Wellness Coach I am constantly being asked what I eat, what my kids eat and how I get all those fruit and veggie servings in every day.

This blog is for all those people out there who need to be "in the know" about what I do on a daily basis, the choices we make as a family to make sure we are eating and living as healthy as possible 90% of the time.

We are not perfect and there will be people who will disagree or find fault in some of the things we are doing. I'm an open minded person who is open to perspectives other than my own. I just ask that you be considerate and respectful when responding to my posts.

I'm here to make a positive impact and offer help to families who are struggling with making consistently healthy choices. I'm not here to compete with other families who are "crunchy" like us or prove that our way is the "right" way. I believe that every family should find their own path to optimal health and wellness.

Enjoy the journey with us!
